Update and Ice cream

Well Candler had her procedure last week. She did have some renarrowing in her airway and they ballooned it open again. They were more aggressive this time with balllooning so we hope and pray that this time it will stay open. She will be re-scoped again in about 3 weeks to determine if it worked. Her recovery has been a little rough but we are thankful to be home and not sleeping in the hospital. She continues through everything to play hard and be full of happiness. These pictures were taken the day before her procedure at the neighborhood ice cream party. She is throughly enjoying her ice cream sandwich.

Children's Museum

We made a trip to the Children's Museum here in Atlanta a few weeks ago. Candler absolutely loved it! Her favorite was "shopping" for food in the market. Such a fun day.

What's Cookin'


Dinner tonight:
Agave Salmon
Dijon Potatoes
Leftover Grilled Asparagus
Berries and Mango for Dessert

Here's the rundown.... super quick and easy:


Agave Salmon
Salt and pepper Salmon Fillets (hint 1: I always use Kosher salt hint 2: I always use wild caught Salmon)
Drizzle each salmon fillet with agave syrup
Bake 350 for 20 min

Dijon Potatoes (adapted from Barefoot Contessa)
red potatoes (cut up)
1 onion (rough chop)
Drizzle with Olive Oil
A few generous squirts of grain mustard
Salt
Pepper
Then give it a good toss on a baking sheet and Bake 425 for 45 min.

Grilled Asparagus (so these were left over from last night but I thought I would let you know how they were prepared anyway)
Toss Asparagus with olive oil, salt and pepper.... place in a mesh grill basket and grill 'til done)

Berries and Mango
1/2 pint of blueberries
1/2 pint of strawberries (chopped)
1 mango (diced)
Toss and drizzle with honey


So that's the run down. I am always trying to come up with quick easy menus that are Real Food. We do our best to eat whole foods, organic, and non processed. Of course we break the rules but this is our goal. I will keep you posted on future recipes and menus that we like in our house.

Back to Blogging and an Update



I know I have been out of the blogging scene for a while. Things have been a little bit of an emotional roller coaster around here these days. Right around the first of the year Candler was diagnosed with Subglottic Stenosis. This is a narrowing in trachea that she was most likely born with and that was worsened by being on the breathing tube for a short time at birth. Over the past several months she has undergone multiple bronchs (scopes looking at her airway) and 2 balloon procedures. The balloon procedures literally balloon open and stretch the airway. So far these procedures have seemed to be successful. Over the past couple of weeks she has become sick with croup and seems to possibly have some re-narrowing so she is going to be re-bronched on the 26th. We are praying for good news and that she does not have to undergo major surgery. We know God has a plan for her and we are thankful for how well she has done so far. At 15 months she is nothing but energy. She goes nonstop and nothing slows her down. Candler is full of personality and she is walking or should I say running everywhere these days. She is starting to talk, saying Mama, Dada, dog, duck (which refers to any type of bird like creature), down, and Bye (which sounds more like Die). She loves looking for birds and dogs outside, playing at the park, reading books over and over again, and doing crazy things with her Dada. So that is the update on our little ball of energy. I will try to keep up the blogging to keep everyone updated but also to journal all the wonderful and amazing things our little girl does.
